VEGETARIAN STUFFING RECIPE

  INGREDIENTS:

1 1/2 C. broccoli florets 1 C. sliced mushrooms 1 C. sliced zucchini 1 med. clove garlic, minced 1/2 C. (1 stick) butter 1 pkg. (8 oz.) cornbread stuffing OR 1 C. yellow cornmeal 1 C. chopped spinach 1/2 C. sliced green onion 1/2 C. diced green pepper 1/2 C. chopped toasted pecans 1/4 tsp. ground ginger 1 1/2 C. water

DIRECTIONS:

In large saucepan, cook broccoli, mushrooms, zucchini and garlic in butter until vegetables are tender.
Add remaining ingredients and blend well.
Spoon into buttered 2 quart baking dish.
Cover and bake at 350 degrees for 30 minutes.
Makes about 7 cups.
*If more moist stuffing is desired, increase water to 2 cups.
Serve with ham or kabobs.
