VEGETARIAN BURRITOS RECIPE

  INGREDIENTS:

1 bell pepper 1 lg. onion 2 cloves of garlic or 1 tsp. minced garlic 2 Tbsp. canola oil Add anything you like (these are my favorites): 2 to 3 carrots, sliced 4 to 5 zucchini, diced 1 lg. can tomatoes 1/2 lb. (or so) mushrooms 1 lg. can diced green chilies 1 sm. can black olives 1 Tbsp. chili powder 1 tsp. ground cumin Guacamole: 2 to 3 avocados 1 lg. tomato, diced 1 sm. can diced green chili A squeeze of lemon juice

DIRECTIONS:

In canola oil, saute onion, pepper and garlic until soft.
Cook remaining veggies until soft, drain.
Add Mozzarella cheese to your liking.
Fill tortillas.
Bake 5 to 10 minutes at 350 degrees.
Top with Guacamole.
