VADAS RECIPE

INGREDIENTS:
1 1/4 C. farina
1 C. water
1 medium yellow onion, finely chopped
2 each green chiles, chopped
1/2 tsp. salt
1 Tbsp. cilantro, chopped
1/4 C. cashews, chopped
2 Tbsp. coconut cream
3/4 tsp. ginger, minced
Oil for deep fat frying
DIRECTIONS:
Bring water to a boil. Place farina in a bowl and add the water stirring as you add, to make a dough. Add onions, chiles, salt, cilantro, cashews, coconut cream and ginger. Mix well. Take 2 Tbls. of the dough mixture and form into a thick round patty. Cut with a doughnut cutter or use your fingers to make a hole in the center. Repeat with the remaining dough. Heat vegetable oil and fry the vadas 4 at a time for about 10 minutes, turning as necessary. Drain on paper towels and serve hot with chutney.
