TEXAS RICE RECIPE

INGREDIENTS:
1 C. uncooked rice
2 Tbsp. butter
1/2 C. finely chopped onion
1/2 C. finely chopped green pepper
1 C. canned tomatoes, preferably Italian plum style
salt to taste
2 tsp. chili powder
1/2 tsp. ground cumin seeds
1 1/2 C. chicken broth
DIRECTIONS:
Cook the rice in the butter, stirring frequently. When rice starts to turn golden, add the onion and green pepper. Continue to cook until onion wilts; add the remaining ingredients. Cover and bring to a boil. Reduce the heat and simmer for 30 minutes without raising the cover. Let stand until ready to use. The dish may stand for 30 minutes before serving. Serves 4.
