TAFFY APPLE CAKE RECIPE

  INGREDIENTS:

1 1/2 C. butter, softened 4 1/2 C. sifted powdered sugar 1 Tbsp. vanilla 6 eggs 3 1/4 C. flour 2 Tbsp. cinnamon 1 Tbsp. allspice 16 caramels 1 1/2 C. coarsely chopped apples

DIRECTIONS:

Preheat oven to 325.
Grease one 10-inch tube or bundt pan.
Unwrap and cut each caramel into 8 pieces.
In a large mixer bowl cream butter, powdered sugar and vanilla until light and fluffy.
Add eggs, one at a time, beating well after each one.
Gradually add flour, ground cinnamon and ground allspice to egg mixture.
Blend on low speed until combined.
By hand, stir in caramel pieces and apples.
Pour batter into prepared pan.
Bake 85-90 minutes or until cake tests done.
Cool upright in pan 15 minutes before inverting onto serving plate.
Top with ice cream if desired.
