SPICED RICE PILAF RECIPE

  INGREDIENTS:

1 C. brown basmati rice 1 Tbls. vegetable oil 1 small onion, chopped 1 clove garlic, minced 4 whole cloves 1/8 tsp. salt 2 C. chicken broth 1 cinnamon stick 1 tsp. vegetable oil 1 Tbls. raisins 1 Tbls. almonds, blanched slivered, or 1 Tbls. pine nuts

DIRECTIONS:

Soak rice 2 hours to shorten cooking time; rinse and drain.
In a large nonstick saucepan, heat 1 Tbls.
oil.
Sauté onion and garlic until tender, 2 to 3 minutes.
Add cloves; cook 1 minute.
Add rice; stir to coat.
Add salt, broth.
and cinnamon stick.
Bring to a boil.
Cover; reduce heat.
Simmer 20 to 25 minutes, until liquid is absorbed.
Discard cinnamon stick.
Heat 1 tsp.
oil.
Add raisins and almonds; warm.
Mix with rice and serve.
