SKINNY GUACAMOLE RECIPE

INGREDIENTS:
1 avocado, halved and pitted
1 Tbls. fresh lime juice
1 tomato, peeled, seeded, chopped
2 Tbls. chopped red onion
2 Tbls. chopped fresh cilantro, or fresh coriander
1 jalapeno, seeded and minced
1/2 C. yogurt cheese
1/4 Tbls. salt (optional)
freshly ground pepper, to taste
DIRECTIONS:
Using a spoon, scoop avocado pulp into a bowl. Add lime juice. With a fork, coarsely mash avocado. Stir in tomato, onion, cilantro, jalapeno, and yogurt cheese. Season with salt and pepper. Serve within 1 hour at room temperature.
