ROASTED BEAVER RECIPE

  INGREDIENTS:

1 beaver 1/2 stick margarine 3 C. water 1 Tbsp. salt Pepper to taste

DIRECTIONS:

Clean and dress beaver.
Remove all visible fat.
Rub beaver with margarine outside and in cavity.
Salt and pepper.
Place in large roaster with 3 cups water.
Cook covered until tender at 350 degrees for approximately 3-4 hours.
If beaver is not brown, take lid off and broil for a few minutes.
(Beavers are also good barbecued slowly over coals.
)
