PORK TENDERLOIN WITH FRUITED STUFFING RECIPE

  INGREDIENTS:

1 1/2 pounds pork tenderloin to 2 pounds 3 C. packaged stuffing mix 10 to 12 oz. 2 Tbls. dried celery flakes Or 1 celery rib, chopped 1 Tbls. dried onion flakes Or 1 small onion, chopped 1/3 C. finely-chopped dried apricots 1 apple peeled, cored, and finely chopped 3/4 C. hot water 1 can 98% fat-free cream of celery soup 2 Tbls. melted butter

DIRECTIONS:

Slice pork tenderloins about 1 1/2 inch thick, place in 3 1/2 quart or larger crock pot.
In a mixing bowl, combine remaining ingredients and spoon over pork slices.
Cover and cook on low for 7 to 9 hours.
