POLYNESIAN PORK RECIPE

INGREDIENTS:
1 1/2 pound. pork, cut into 1-inch cubes
salt and pepper to taste
2 Tbsp. salad oil
4 tsp. cornstarch
3/4 C. vinegar
1 C. firmly packed brown sugar
1/2 C. tomato catsup
1 tsp. soy sauce
1 can (13 1/2 ounce.) pineapple chunks, drained
1 medium green pepper, slivered
hot cooked rice
DIRECTIONS:
Season meat and brown in salad oil. Drain off excess fat; remove from skillet. Add sugar, catsup, soy sauce and juice from pineapple. Cook, stirring constantly until thick. Add meat, cover and simmer 30 minutes. Add pineapple and green pepper. Continue cooking 10 minutes. Serve over hot rice.
