MICROWAVE FISH RECIPE

  INGREDIENTS:

1 "sleeve" Hi-Ho or Townhouse or Ritz crackers 1 stick butter or margarine 1 1/2 C. Cheez-its (2 handfuls) 1 1/2- 2 lbs. fish fillet (scrod, haddock, etC.) 1 pkg. sliced Mozzarella cheese (about 6 oz.)

DIRECTIONS:

Melt butter or margarine; set aside.
In medium size bowl, put crackers and Cheez-its, crush with fist into crumbs.
Add melted butter; mix together.
Place fish in greased baking dish, skin side down.
(To prevent overcooking thin "ends" fold them under.
) Put half of crumb mixture on top of fish.
Microwave 5 minutes.
Remove from oven, place slices of Mozzarella cheese on top.
Cover with remainder of crumbs.
Microwave 5 minutes more (High).
Serve.
(Fish will flake when done.
) 15 minutes preparation and cooking time.
Fish, about 5 minutes per pound.
