MICROWAVE CHICK PEA SOUP RECIPE

INGREDIENTS:
1 C. chopped carrots
1/2 C. diced potatoes
3 Tbsp. chopped parsley
16 oz. can chick peas, washed and drained
Dash salt
1 qt. boiling water
1 C. chopped celery
1 1/2 C. chopped onions
1/3 C. olive oil
4 Tbsp. catsup
Dash pepper
5 - 6 beef bouillon cubes, crushed
DIRECTIONS:
Mix together vegetables and oil in large 2 1/2 quart casserole. Cook covered for 15 minutes, stirring every 5 minutes. Add chick peas, seasonings and boiling water and bouillon cubes. Mix together well. Cook covered 10 minutes. Serve.
