MEXICAN COUNTRY STYLE EGGS RECIPE

INGREDIENTS: 1 doz. corn tortillas 1 jar salsa (hot or medium) Or tomatoes, chile, cilantro, garlic, onions (finely chopped) 1 doz. eggs 3-4 Tbsp. lard Butter to fry eggs Fried beans Grated Monterey cheese DIRECTIONS: Heat lard in skillet. Fry tortilla on both sides until limp. Drain on paper towels. Put 2 on plate side by side, keep warm in oven. Fry eggs in butter over easy, slide onto each tortilla spoon warmed salsa on top of eggs.
