MASHED POTATO PUFF RECIPE

INGREDIENTS:
1/3 C. hot milk
2 Tbls. butter or margarine
1/2 tsp. salt
1/8 tsp. pepper
3 C. cold mashed potatoes
2 egg whites, stiffly beaten
DIRECTIONS:
To hot milk add butter, salt and pepper. Pour into mashed potatoes and beat until smooth. Fold in the beaten egg whites. Put mixture into oiled casserole. Refrigerate potato mixture for several hours if it is to stand in the oven before baking begins. Bake puff, uncovered, at 375° for 45 minutes. (4 servings)
