LIMA BEAN FILLED POTATO SNACKS RECIPE

INGREDIENTS:
1 C. lima beans, cooked
1 clove garlic, minced
1 Tbls. lemon juice
1/4 C. onion, chopped
1 Tbls. parsley, chopped
1/2 tsp. dill
1/4 C. yogurt, plain
24 new potatoes, cooked
DIRECTIONS:
Preheat oven to 350 degrees F. Combine all ingredients, except yogurt and new potatoes, in a nonstick skillet. Cook over medium heat until onions are tender, about 5 minutes. Pour into a food processor or blender; add yogurt. Process until smooth. Cut a thin slice off the bottom of each potato to prevent rolling. Scoop out a small amount of potato; fill cavity with lima bean mixture. Heat stuffed potatoes for 10 to 15 minutes before serving.
