KUGELIS (LITHUANIAN POTATO PUDDING) RECIPE

  INGREDIENTS:

1/2 lb. bacon 1 large onion 5 lb. potatoes 6 eggs 1/2 C. cream 1/2 C. butter 1 tsp. salt

DIRECTIONS:

Slice bacon in small pieces and cook with chopped onion until done.
While that is cooking grate potatoes (add a tablet or two of vitamin C keeps the potatoes from turning dark).
Beat the eggs and add to grated potato.
Add cream, salt and bacon/onion mixture and mix.
Put in baking dish and bake at 400° for 20 minutes and then turn oven down to 350° and bake for 1 to 1 1/2 hours until golden on top .
Keep checking after one hour.
Should be well done so there is no potato taste.
