ITALIAN SAUSAGE AND PEPPERS RECIPE

  INGREDIENTS:

1 1/2 pound hot or sweet italian sausage strips links 2 large onions sliced 1/4 C. water 1/2 tsp. salt 2 large green peppers cut into 1/2 tsp. oregano leaves

DIRECTIONS:

In 12 inch skillet over medium heat, heat sausage with water to boiling.
Cover and cook 5 minutes.
Remove cover; continue cooking, turning sausages frequently, until water evaporates and sausage links are well browned, about 20 minutes.
Remove sausages to paper towels to drain.
Pour off all but about 3 Tbls.

fat from skillet; add green peppers, onions, salt, and oregano leaves; over medium heat, cook, stirring frequently, until vegetables are tender.
Add cooked sausage links to vegetables; heat through.
