HERBED GREEN BEANS RECIPE

  INGREDIENTS:

1 lb. green beans, trimmed and cut into 1" pieces 1 Tbsp. olive oil or butter 1 medium onion, chopped 4 - 6 cloves garlic, finely chopped 1/2 C. white wine, chicken broth, or water 1 C. coarsely chopped canned or fresh tomatoes 2 Tbsp. chopped fresh thyme leaves or 2 tsp. dried thyme salt and freshly ground pepper to taste lime wedges for garnish

DIRECTIONS:

Boil or steam the beans until just tender, about 3 minutes.
Drain and set aside.
Heat the oil in a large skillet over moderate heat and cook the onion, stirring frequently, until tender but not brown, about 10 minutes.
Add the garlic and cook an additional 2 minutes.
Add the liquid, tomatoes, thyme, salt, and pepper and cook uncovered for 10 minutes, stirring occasionally.
Add the green beans, stirring to combine well, and cook an additional 2 to 3 minutes.
Serve with lime wedges.
Serves 4 to 6.
