GOODLIES RECIPE

INGREDIENTS:
1 C. cake flour
1/3 C. granulated sugar replacement
2-1/2 C. oatmeal
1 C. margarine
3/4 C. Chocolate Topping
Chocolate Topping:
3 C. skim milk
2 oz. baking chocolate
3 Tbls. cornstarch
1/2 C. granulated sugar replacement
1 tsp. salt
2 Tbls. butter
2 tsp. vanilla extract
DIRECTIONS:
Combine milk, chocolate, cornstarch, sugar replacement and salt in saucepan. Bring to a full boil, and boil for a 2 to 3 minutes; remove from heat. Stir in the butter and vanilla Cake: Combine cake flour, sugar replacement and oatmeal in a bowl. Cut in margarine until all ingredients are blended into a crumbly dough. Press 1/2 dough into bottom of an 11 by 7 inch, well greased pan. Spread 1/2 C. chocolate topping over entire surface. Sprinkle remaining dough; gently press the top dough. Drizzle with remaining chocolate topping. Bake at 350 degrees for 25 to 30 minutes. Cool slightly. Cut into squares.
