FRESH TOMATO RISOTTO RECIPE

  INGREDIENTS:

1 C. peeled, chopped tomatoes 3/4 C. uncooked rice 1/2 C. finely chopped onions 1 clove garlic, finely minced 1/2 tsp. oregano 1/2 tsp. salt 1 3/4 C. concentrated chicken broth

DIRECTIONS:

Preheat oven to 375°.
Combine the tomatoes, rice, onions, garlic, oregano and salt in a 1 1/2 qt.
casserole dish.
Heat the broth to boiling and pour over the tomato mixture.
Cover and bake, stirring occasionally for about 35 minutes or until the rice is cooked.
Serves .
