FRAGRANT COUSCOUS RECIPE

INGREDIENTS:
1 1/2 pound couscous
8 ounce(s) peanuts broken small
4 ounce(s) raisins
4 ounce(s) dried cherries
1 Tbsp. cinnamon
1/2 tsp. ginger powder
1 tsp. saffron (soaked in water)
DIRECTIONS:
Prepare couscous in water according to package directions. In a large bowl add remaining ingredients to cooked couscous. If this is to be used as a side dish, reheat mixture in 350 degree oven for 20 minutes. You can also use this top stuff eggplant, squash or tomatoes.
