DEER RIB STRIPS AND KRAUT RECIPE

INGREDIENTS:
1 - 1 1/2 lb. strips trimmed from deer ribs
3 bls. bacon grease or shortening
1 qt. home canned kraut (or 1 - 2 1/2 can)
1 tart apple (peeled, cored and chopped)
3 ripe tomatoes (peeled and chopped or 1 - #303 can)
1/2 C. brown sugar
1 Tbsp. caraway seeds
DIRECTIONS:
In a Dutch oven or heavy pan, melt bacon grease over medium heat. Stir rib strips into bacon grease and cook slowly until strips have lost their color. Stir kraut (with liquid) and remaining ingredients into the ribs. Bring to a boil, stirring frequently. Reduce heat, cover and simmer until ribs are tender.
