DEER LIVER LOAF RECIPE

  INGREDIENTS:

1 1/2 lbs. deer liver 1/2 lb. bacon 1 med. onion 4 slices bread (tear into crumbs) 2 eggs (beaten) 1/4 C. milk 1 tsp. ground sage 1 tsp. salt 1/2 tsp. pepper

DIRECTIONS:

Rinse liver in cold water.
Place in medium saucepan, cover with water.
Bring water to a boil.
Reduce heat, cover and simmer 15 minutes.
Remove liver and allow to cool.
Cut into chunks.
Grind liver with the bacon and onion.
Place in a bowl.
Add remaining ingredients.
Stir until smooth.
Put mixture into a greased loaf pan.
Bake in a preheated 350 degree oven for 1 hour.
