CREPES RECIPE

INGREDIENTS:
1 1/2 C. wholewheat flour
3 Tbsp. soy flour
1 tsp. baking powder
2 tsp. oil
1 tsp. salt
water, as required
DIRECTIONS:
Combine the flour, baking powder and salt in a large mixing bowl. Make a well in the center, pour in the oil, then gradually add the water, stirring constantly with a fork. Add enough water until have a consistency like that of a thick cream. Leave to stand for 30 minutes to an hour. If it is too thick, add a little more water; if too thin, add more flour. Melt some margarine or oil in a skillet and fry the crepes on both sides until lightly browned. Fill with jam and serve.
