CRANBERRY ORANGE BARS RECIPE

  INGREDIENTS:

1 C. finely chopped cranberries, or 2 C. whole fresh or frozen berries 2 oranges, ground skins and pulp 1/2 C. raisins, dark or golden 1/4 C. brown sugar, or 2 Tbls. fructose 1/3 C. margarine 2 eggs 1 tsp. vanilla 1 C. whole wheat flour 1 C. unbleached white flour 2 tsp. baking powder

DIRECTIONS:

Combine the cranberries, oranges, raisins and brown sugar in a mixing bowl.
Set aside.
Cream margarine until light and fluffy.
Add 1 egg at a time and beat well.
Blend in vanilla.
Gradually add the flours and baking powder to creamed mixture.
Stir in cranberry mixture, and pour batter into a greased 13 by 9-inch baking pan.
Bake at 350 degrees F.
for 30 to 40 minutes, or until browned on top.
Cool in the pan on a wire rack.
