COUSCOUS SALAD RECIPE

INGREDIENTS:
1 C. couscous, re-hydrated
1/4 C. pepper, finely chopped, red or yellow
1/4 C. carrots, chopped
1/4 C. celery, finely chopped
2 Tbls. Italian parsley, minced
1 Tbls. olive oil
4 Tbls. rice vinegar
2 garlic cloves, minced
3 Tbls. scallions, finely minced
fresh ground pepper
DIRECTIONS:
Combine the couscous and vegetables together in a large bowl. Combine all the dressing ingredients in a blender or food processor, and process for 1 minute. Pour over the couscous and vegetables. Toss well and serve.
