COLIFLOR AL AJO ARRIERO (GARLIC CAULIFLOWER) RECIPE

  INGREDIENTS:

1 cauliflower, separated into florets 6 Tbsp. olive oil 3 cloves garlic, finely chopped 1 Tbsp. paprika 1 Tbsp. red wine vinegar salt and freshly ground pepper to taste cayenne pepper to taste (optional)

DIRECTIONS:

Boil the cauliflower in enough salted water to cover until tender, about 15 minutes.
Drain and place in a serving bowl.
Heat the olive oil in a small skillet over moderate heat and sauté the chopped garlic for 1 minute.
Remove from the heat and add the remaining ingredients, stirring to mix well.
Pour over the cauliflower and serve immediately.
Serves 4 to 6.
