CHICKEN AND SAUSAGE GUMBO RECIPE

INGREDIENTS:
1 1/4 pound boneless chicken, skinned and diced
3/4 pound cajun style or hot italian sausage, sliced
1 large onion, sliced
1 red bell pepper, diced
3 Tbsp. flour
1 -14 1/2 ounce can cajun style stewed tomatoes
1 C. chicken broth
-hot pepper sauce
DIRECTIONS:
Brown sausage in a heavy 4 quart. pot. Add chicken, onion and red bell pepper. Sauté until chicken is cooked, about 8 minutes. Sprinkle with flour; cook 1 minute. Stir in tomatoes and broth. Cook, stirring occasionally, for 15 minutes. Add hot pepper sauce to taste. Serve over hot cooked rice, if desired.
