BRUSSELS SPROUTS CASSEROLE RECIPE

INGREDIENTS:
1 1/2 pound brussels sprouts
1 medium onion, sliced
olive oil
5 medium tomatoes, sliced
1/2 C. water
1 C. soy cheese, shredded
DIRECTIONS:
Sauté onion in olive oil until transparent. Arrange brussels sprouts in casserole with onions and tomatoes. Cover with water. Cover and bake at 325 degrees for 45 minutes. When sprouts are tender, sprinkle with the cheese and brown under the broiler.
