BANANA MUFFINS RECIPE

INGREDIENTS:
3 medium bananas, mashed
2 ounces tofu, mashed
1/2 C. sugar
2 Tbsp. oil
2 1/2 tsp. baking powder
1 tsp. salt
1/2 tsp. cream of tartar
1/2 C. water
2 C. flour
DIRECTIONS:
Combine mashed bananas and tofu with the sugar. Add the remaining ingredients in order. Mix well. Spoon into lightly oiled muffin tins. Bake in an oven preheated to 350 degrees for 20 to 25 minutes or until golden brown on top. Cool on wire racks
