ARTICHOKE PARMESAN RECIPE

INGREDIENTS:
1 C. breadcrumbs, plain
2 Tbls. parmesan cheese
4 Tbls. Italian salad dressing, low calorie
9 ounces artichoke hearts, canned and drained, or frozen and thawed
2 medium tomatoes, quartered
DIRECTIONS:
In a small bowl, combine breadcrumbs, cheese, and 3 Tbls. salad dressing. Mix well and set aside. In another bowl, combine artichoke hearts with remaining 1 Tbls. salad dressing, tossing thoroughly. Arrange artichoke hearts and tomato wedges in a 1-quart casserole dish. Sprinkle breadcrumb mixture over vegetables. Bake at 350 degrees F. for 35 to 40 minutes or until topping is light brown.
