ALMOND RICE RECIPE

  INGREDIENTS:

1 C. long grain brown rice 2 C. water 1 tsp. low sodium bouillon granules 2 Tbls. almonds, silvered, or 2 Tbls. pine nuts 2 Tbls. grated lemon zest

DIRECTIONS:

In a medium saucepan, bring rice and water to a boil.
Turn off heat and let rice stand in water, covered, 6 hours.
When ready to cook, add bouillon granules and bring to a boil.
Cook 10 minutes until water is absorbed and rice is tender.
Drain, if necessary.
Add almonds and lemon zest.
Let stand a few minutes, then fluff with a fork and serve.
